Blender: Homemade Almond Milk Kissed with Dates

DO YOU KNOW WHAT'S IN YOUR ALMOND MILK?

It's something that has been nagging me for years after someone in the almond industry told me that commercially-made almond milk typically had very very few almonds. So, if that almond milk at most grocers doesn't have many almonds in it then what does it contain? Apparently mostly water, gums, and stabilizers. No, thank you! Why I'm on a mission to perfect my own!

Homemade Almond Milk Kissed with Dates

Ingredients

  • 2 cups raw, unsalted almonds, soaked and drained
  • 6 cups water, for blending
  • 2 large dates, pitted

Instructions

  1. Soak the almonds in a large glass or metal bowl in ample water at least 8 hours to overnight. Once soaked, drain and take the peels off. You can also keep the peel, but the extra effort is worth it. 
  2. Place the almonds, water, and dates in a high-powered blender like a Vita Mix. Blend at a high speed for 45 seconds to 1 minute. 
  3. Drink as is or for a smoother taste, strain through a nut milk bag or cheese cloth. Store in the fridge for up to 2 weeks and enjoy. Try adding other flavors like vanilla extract or rose water.
