Sabut means whole. This form of the moong bean is commonly found in Indian cuisine cooked with spices and water into a fragrant dal. It is also sprouted and even eaten as a dessert. High in protein and fiber while low in fat, it is a fantastic addition to any diet including a vegetarian, vegan, or gluten-free one.
Soak one cup of washed whole moong in water overnight or at least 2 hours. Drain and add to a roomy pot with 2 tablespoons each minced onion, ginger, and garlic; 1/2 teaspoon each turmeric and red chile powders; 1 teaspoon each cumin seeds and salt; 2 teaspoons each garam masala and coriander powder; and, 5 cups water. Simmer partially covered for 40 minutes. Enjoy over rice, with Indian bread, or as a soup … it’s as easy as pie — Indian As Apple Pie!
