Chana dal, also known as Bengal Gram, are split and skinned black chickpeas and commonly cooked with spices and water into a fragrant dal. High in protein and fiber while low in fat, it is a fantastic addition to any diet including a vegetarian, vegan, or gluten-free one.
Soak one cup of washed chana dal in water for at least 1 hour. Drain and add to a roomy pot with 2 tablespoons each minced onion, ginger, and garlic; ½ tsp each turmeric and red chile powders, 1 tsp each cumin seeds and salt, 2 tsp each garam masala and coriander powder and 5 cups water.
