This is one of the most versatile spice blends. Mix it with yogurt to make a fantastic marinade for virtually any protein or vegetable before it hits the grill. This is the key spice blend in the South Indian dish sambhar, in which vegetables and lentils are cooked together along with tamarind. The word chaat literally means to lick your plate clean - it was that good. It's the main spice blend that is in many snack foods and fresh ingredients, especially onion and cucumber salads, which are often served with an Indian meal. Douse your fresh veggies in lemon juice and sprinkle with a little Chaat Masala over them for an experience that will convince most anyone (even kids) to eat up their vegetables!

Most dishes in Indian cooking have a specific set of spices (masalas) that gives them a unique flavor and appeal. For example, traditional chana masala gets its tang from dried pomegranate seeds and amchur powder (dried mango). You can make these blends at home yourself - just follow the recipes in my books - or you can purchase my own unique blends.
What you will love about these masalas that every one is a recipe that I came up with myself - either by watching my grandmothers cook, experimenting myself, or working with my South Indian aunties in the kitchen. The taste profiles are spot on.
They are not only authentic because of the spices used, but because of the process. I did not move forward to offer you these blends until I found someone who would hand roast them to perfection - just like I do at home. It's not easy to find someone like that in the US, where many Indian masalas are ground (I found out) without roasting. You lose a layer of taste if you compromise - and I refuse to do that with any of my products.
They are also all roasted and ground in small batches - ensuring they are the freshest when reaching you.
I also worked hard to make sure that there are NO additives, unnecessary salt, and food dyes in my blends. I was saddened to see that many masalas even coming from India cannot say that. Know that what you are getting from me is at once authentic and healthy.

Although this is not a blended spice mix, Kala Namak (Black Salt), is a special ingredient in many Indian dishes. It is a pungent, naturally deep purple rock salt extracted from the Himalayas in the salt ranges in the northwest of Pakistan. It is used in many Indian dishes, such as chaat and chutneys. It is a wonderful addition to a vegan eggless salad.

Many South Indian meals start with a small bowl of soup called rasam. It's traditionally thin and tart - based on a delicious mix of tomatoes and tamarind. From there, you add spices like whole red chiles, mustard seeds, curry leaves, and rasam powder to pull it all together. You can use this powder traditionally or even sprinkled into an Indian-inspired stir-fry. Just like all of my other blends, you can even garnish your popcorn with it to give it an extra kick.

When people think of Indian cuisine, the first thing that often comes to mind is chai, a spice-infused black tea that is boiled with milk and served steaming.
Most people don't realize that the spices, which make authentic Indian tea, can easily be combined and ground at home. Use this masala to make tea, or be more creative by using it in everything from breads, apple pie, and even sprinkled over roasted nuts. This is a true Desi chai spice blend. Not Chai 'Tea' as some call it outside of India. One sip will transport you right to my dad's childhood village in the heart of Punjab.
To make Chai with this blend, boil 2 cups of water, add a black tea bag, 1/2 - 1 teaspoon of this masala, milk, and preferred sweetener to taste, strain, and sink into a comfy chair for a definite and welcome break from your day.

Light, fresh, citrus, and grassy are the flavors you'll get when you use coriander powder. It lends depth to your Indian curries and can also add tang without using lemon juice. The seeds, knowns as sabut dhania in Hindi, are beautifully round and yellow-green and come from the flowers of the coriander plant, also known as cilantro. At once earthy and warm, turmeric (haldi) is a versatile spice and critical to most Indian dishes. A lot like ginger, fresh turmeric grows underground. I still remember our beloved family gardener (mali) in India digging it out for me where it grew in the backyard. The inside of the root is a deep orange-yellow, just like this powder. Raw, it can be pickled. Boiled, dried and powdered, it can be used in so many other ways. When cooking with it, always remember that a little goes a long way. Stir-fry it along with any vegetable including zucchini and cauliflower, use it to make mock egg salad with tofu, and pep up potatoes with it.
Try it in my morning mini cleanse: juice of 1 lemon, 1/2 teaspoon turmeric, and 2 cups boiling water. Drink it down every morning as I do on an empty stomach to clean out the liver and flush your system.

Mustard seed, rai, are to South India what cumin seeds are to the North. In Indian cooking, the brownish-black variety is used most. The best way to cook with them is to put them in hot oil and to cover the pan until they pop a bit. Mustard seeds can be used in everything, from salads to lentil stews to pickles. They add tartness to a dish when ground to a powder and a mustard taste when ground to a paste. Keep in mind, that a little does go a long way and imparts a slightly tangy, bitter note to your dish. Fry them up in a little oil and try them in your next potato salad for some zip.

In India, we call Red Chile Powder lal mirch. This red powder made from dried chiles adds color and heat to a dish. Use sparingly for milder notes, but if you like spicy food, you'll want to be more generous. This chile is the ground powder of the chile peppers and should not be mistaken with chili powder, which is a combination of chile and other spices that is often used to make Tex-Mex and Mexican dishes. In fiery Indian curries, lal mirch is a must and is used generously. But, if you are new to spicy foods, use it sparingly until you are comfortable with heat levels. A pinch or two even after you have prepared your dish is a perfect start. Use it as a pop of flavor on anything from sauteed potatoes to deviled eggs.

Garam Masala translated literally means 'warm spice mix,' and is an essential blend used throughout North Indian cuisine. Most homes make their own, using a combination of key spices.
